Sabodet

Sabodet, also referred to as a coudenat or coudenou, is a French word for a large sausage made from pig's head, tongue, fatty pork, and beef.[1][2][3] It is cut into thick slices and served in Lyonnais. The name derives from the sausage's original shape, like that of a sabot.[1] They are served up by Colette Sibilia.
